Ariane's Favorite Corn Salad

Ariane_Duarte.jpgI was so lucky as a girl - I have terrific memories of every summer spent "down the shore" - on the beach at Point Pleasant, New Jersey. What I loved most were our BBQs. We had many. We celebrated all of the June birthdays, Father's Day, Fourth of July, Labor Day...some of the best BBQs were for no reason at all!!

Jersey Corn is plentiful in the summer. I can still taste the sweetness of it today in my mind. I remember we would just boil it and lather it in butter and salt. So simple but soooo good!!!

As I grew up and became interested in cooking I would simply soak the whole corn in the husk in water for 5 minutes and then grill it. I really loved the sweetness and the smokiness that the corn took on.

There was were always leftovers, and I loved making different corn salads with whatever was in the fridge. Today, you can definitely find corn on my summer menu at CulinAriane, my restaurant in Montclair.

Here is an easy but delicious summer corn salad:

Ariane's Favorite Corn Salad

2 cups grilled corn off the cob
2 jalepenos, diced small, with seeds removed (leave seeds in if you like it HOT)
1 red pepper, diced small
1 Tablespoon of mint, chopped
1 Tablespoon of basil, chopped
1/4 cup lime juice
salt and pepper to taste

Mix all together. Season and serve.

This is great over fish, chicken, shrimp, lobster, or all by itself.
